Sweet Potato Tikki

Ever heard of sweet potato tikkis... Yes I am also hearing it for the first time.

I had around half kg sweet potatoes in my pantry. I thought rather than just boiling it and eating it, why not try out something different. Just followed instructions from my mind and prepared some tikkis in my oxy fryer. And it came out really awesome :) Hence it finds a place on my blog.



Ingriedients:
Sweet Potatoes - 3 big
Grated Paneer\ Cottage Cheese - half cup
Chilli powder - half teaspoon
Chat Masala - 1 teaspoon
Grated Ginger - 1 tablespoon
Coriander leaves - finely chopped
Salt
Oil - 1 teaspoon (Optional)

Procedure:
1. Boil the sweet potatoes. Once it cools down mash it completely.
2. In a mixing bowl, mix all the ingriedients except oil and mix well and make small tikkis.
3. Brush both sides of tikkis with one drop oil.
4. Pre heat the oxyfryer for 5 minutes at 160 degress.
5. Place the tikkis on the tray of oxy fryer and  keep it again for 15 minutes at 160 degrees.
6. After that , just flip the tikkis to the other side and keep for 5 more minutes. This is to ensure that both sides become crispy.



The delicious Sweet Potato Tikki is ready.

Serve it with mint chutney or tamarind chutney or just ketchup.

Chocolate Sponge Cake (Eggless)

Since many days I was planning to bake a chocolate cake, but somehow it was getting postponed.
Finally with some inspiration from dear hubby, managed to bake the cake this weekend and guess what...It was a big success :)

This is my first experience with baking the cake and I was surprised to see that it was so simple to prepare, and yet so delicious and soft

My little daughter took the honor to cut the cake and we had to sing the birthday song for her.
Within a few minutes, the hot cake disappeared from the table.

This was also the first time we were eating a hot cake. None of us gave it a chance to cool down completely ;)



Ingredients
½ cup Milk Maid.
½ + ⅛ cups maida.
⅛ cup cocoa powder.
¼ tsp baking soda.
½ tsp baking powder.
¼ cup oil.
2 tbsp powdered sugar.
¼ cup water
¾ tsp vanilla essence (optional).
Ghee for lining the tin

Procedure:
1. Sift maida with cocoa powder, baking soda and baking powder. Keep it aside.
2. Beat the Milk Maid for 4-5 minutes till it turns light and fluffy. Gradually add
sugar and again beat for 4-5 minutes till grittiness of sugar reduces. Add oil and beat well to make homogeneous mixture.
3. Add flour in 2-3 rounds. After every addition beat the
ingredients slowly. This process needs to repeat thrice. Also add little water in between.
4. Grase the tin with ghee and put the mixture in a the tin
5. Pre-heat Oxy Fryer for 5 minutes at 140° C. Keep the cake tin in fry basket and
close it properly. Keep the fryer at 140° C for 25 minutes. After 5 minutes
de-mould the cake and let it cool completely.



The delicious cake is ready.

Cover the cake with aluminum foil and you can store it in fridge.

Tandoori Gobhi

Back to Oxy Fryer recipes...

This is one of the recipe that came along with the oxy fryer recipe booklet.
With some minor modifications to the original recipe, presenting my version of Tandoori Gobhi, which is completely oil free :)

So just enjoy munching...



Ingriedients:
Cauliflower\ Gobhi - cut into big florets - half kg
Cinnamon stick - 1 piece
Cloves - 4
Turmeric powder - half teaspoon
Water
Salt
Lemon juice - 2 teaspoon
Chaat masala - 1 teaspoon

For Marination: 
Hung curd - half cup
Besan - 1 tablespoon
Turmeric powder - half teaspoon.
Red chilli powder - 1 teaspoon
Coriander leaves - very finely chopped - half cup
Tandoori Masala - half teaspoon (Optional)
Salt

Procedure:
1. Boil three cups of water with whole spices liek Cinnamon and cloves, salt and a pinch of turmeric powder.
2. When water starts boiling, add the cauliflowers florets. Boil it for five minutes. Drain the water and keep the cauliflower aside in a plate.
3. Heat a non-stick pan and dry roast besan on low heat till it gives out a nice aroma.
4. In a large bowl combine hung yogurt, roasted besan, red chilli powder, turmeric powder, tandoori masala, coriander leaves and salt. Mix well and keep aside.
5. Marinate the blanched cauliflowers in the yogurt mixture for half an hour.
6. Preheat Oxy Fryer for 5 minutes. Arrange cauliflowers pieces in fry basket and close it properly. Keep the fryer at 180°C for 20 minutes turning sides in between.
7. Remove when done, sprinkle lemon juice and chaat masala.

Tandoori Gobhi is ready!!


Serve it hot with ketchup or mint chutney.
