Vegetable Fried Rice

Vegetable fried rice is something we all love to eat. But for many years now, I was reluctant to try it out at home.
A few days back, I had lots of veggies , so gave a try to fried rice and trust me , it was amazing. Since then i have prepared it many many times.
It is one of the easiest recipe and believe me the taste exactly matches the restuarent style fried rice.
As it is loaded with veggies, it adds on health benefits too!!


 Ingriedients:
Onions -1 - chopped finely
Basmati Rice - 1 cup
Mushrooms - half cup - finely chopped
Carrots  - half cup - finely chopped
Bell Pepper - half cup - finely chopped
Sugar snap peas  - half cup - chopped
Zucchini - half cup - chopped
Garlic - 3-4 petals - chopped
Olive Oil - 1 tablespoon
Pepper powder - half teaspoon - freshly ground
Soya Sauce - 2 teaspoon
Water
Salt

Procedure:
1. Cook the rice in the pressure cooker with a pinch of salt and keep it aside. In the meantime, chop all the veggies.
2.  Tak a vok, add olive oil, then add chopped garlic
3. Next add chopped onions and a pinch of salt.
4. Fry for some time, Next add all the veggies and fry them on high flame by continuously stirring. The veggies should get cooked properly.
5. Once they are cooked, add the rice and sufficient salt and mix well.
6. Next add soya sauce and then freshly ground pepper an mix well.
7. Put off the stove. and mix again

Delicious Vegetable Fried Rice is ready.


Serve it hot with some salads.

Tips:
1. Chop the veggies finely so that they get cooked faster when tossed in olive oil.
2. You can add other veggies like corn, beans, sprouts, etc.
3. Adjust the soya sauce and the pepper powder as per your taste.
4. While serving, sprinkle some pepper powder to enhance the taste and the spice.

Hirwi Mirchicha Thecha\ Dry Chutney with Green Chillies N Peanuts

Thecha is a rural Maharastrian chutney which is usually served with Bhakris and Pithla-Bhaat. It can be also served with any rice-dal or roti-sabji as a side dish. The speciality of thecha is that it is not prepared using the mixer but using the mortar-pestle as shown below.


There are different kinds of thechas. This one is a simple one with green chillies, garlic and peanuts.

Ingriedients:
6-7 Green chillies
7-8 Garlic petals
Half cup roasted peanuts
1 teaspoon Oil
Salt

Procedure:
1. Mix all ingriedinets that is the green chillies, garlic petals and roasted peanuts and crush them using the mortar-pestle.


2. Once crushed to a coase paste, add salt and oil.

Serve it fresh as a side dish with Bhakri or roti or rice.

Notes:
1. If you do not have a mortar-pestle, you can use the mixer. But the taste may not be authentic.
2. Adjust the quantity of ingriedients as per your taste.
3. Always serve it fresh.

Anda Curry\ Egg Curry Masala

Egg - This is one of the most simplest, most easy , most delicious and yet most healthy food.
This is one of my first recipes on egg...with the simple egg masala. Goes well with rice, bread as well as rotis.

This is the first recipe on my blog which has many pictures taken during the preparation showing every detail. Picture Courtesy: our friend Richard who wanted to learn this recipe and hence helped me with the pictures.


Here goes the recipe.

Ingredients:
Eggs - 4
Onions - 2 - finely chopped
Green chillies - 1 - vertically slit
Tomatoes - 1 - finely chopped
Cloves - 2
Cinnamon - 1 small piece
Black pepper - half teaspoon - freshly ground
Oil - 2 tablespoon
Egg Curry Masala (I use Everest) - 1 teaspoon
Chilli powder - half teaspoon
Turmeric powder - half teaspoon

Procedure:
1. Boil the eggs and rinse them in cold water and keep them aside.
2. Take a kadhai, add 2 teaspoon oil, next add the cloves and the cinnamon.
3. Then add the chopped onion, and chillies. Fry it till onions turn golden brown.


4. Next add Chilli powder, Turmeric powder and egg curry masala.



5. Next add chopped tomatoes and fry for some time.

6. Add 1 cup water and sufficient salt. Cover with a lid on a medium flame.
7. Let it cook for 5 minutes.

8. In the mean time, remove the egg shell and cut each egg into 7-8 parts.

9. Add this to the boiling gravy and let it cook for another 2-3 mins.



Egg Curry is ready.


Serve it hot with rice, roti or bread

Cheesy Vegetable Pasta

This weekend  just tried to experiment with pasta. Prepared the same old pasta in a simpler way,  Just tossed the pasta with all the veggies and skipped all the sauces...served it with Lettuce and Yam salad (with some mayonnaise). Awesome combination.



Ingriendients
Pasta - 1 cup
Olive oil - 2 tablespoon
Brocolli- 1 cup
Onions - 1 - finely chopped

Tomatoes - 1 - finely chopped
Carrots - finely chopped - 1 cup
Pepper - fresh ground
Shredded Cheese  - half cup
Garlic - finely chopped - 4 petals
Salt
Water


Procedure
1. Boil the pasta along with salt till the pasta is soft. Drain the water and keep aside
2. In a pan, pour 2 table spoon olive oil, Add the chopped garlic . Next add chopped onions and fry till golden brown.
3. Next add the chopped brocolli and carrots and fry for some time.
4. Add the tomatoes and them the boiled pasta.
5. Finally add salt and shredded cheese.
6. Stir continuously for 5 minutes so that the cheese does not stick the pan
7.Sprinkle the fresh ground pepper.


The delicious Cheesy Vegetable Pasta is ready to serve.


Serve it with a salad of your choice.



Notes:
1. You can add other veggies like capcicum, mushroom, corns , etc
2. I have used Penne Pasta. You can use any kind of pasta of your choice.
