Naked Burrito Bowl

Ingredients

For the Rice

  • 1 cup cooked brown rice
  • 1 tbsp lime juice
  • 2 tbsp chopped fresh coriander
  • Salt, to taste

For the Bowl

  • 1 cup cooked black beans, drained and rinsed
  • ½ cup sweet corn
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, diced
  • ½ green capsicum, diced
  • ¼ cup grated onion
  • 1 cup grated tasty cheese
  • 2 tbsp sour cream
  • 1–2 jalapeños, sliced
  • Fresh coriander leaves, for garnish

Fresh Tomato Salsa (Pico de Gallo)

  • 1 tomato, finely diced
  • 2 tbsp finely chopped onion
  • 1 tbsp chopped coriander
  • 1 tsp lime juice
  • Salt and pepper, to taste

Method

Step 1 – Prepare the Rice

Soak the brown rice for 1 hour in hot water. 

Add a pinch of salt and then pressure cook it for 4-5 whistles.

Once cooked, fluff the rice with a fork and stir through the lime juice, chopped coriander, and a pinch of salt.


Step 2 – Prepare the Salsa

In a small bowl, combine the diced tomato, chopped onion, coriander, lime juice, salt, and pepper.

Mix well and set aside for 10 minutes to allow the flavours to develop.


Step 3 – Prepare the Fillings

Warm the black beans and sweet corn in a small saucepan or microwave.

Dice the capsicum and tomato, shred the lettuce, grate the onion and cheese, and slice the jalapeños.


Step 4 – Assemble the Bowl

Start with a generous layer of coriander-lime brown rice.

Arrange the black beans, sweet corn, lettuce, tomato, capsicum, grated onion, and cheese around the rice.

Top with the fresh tomato salsa and a dollop of sour cream.

Finish with sliced jalapeños and a sprinkle of fresh coriander.
