Shrikhand is one of the most loved Indian desserts, known for its rich, creamy texture and delicate flavours of saffron and cardamom. Made from thick, strained yogurt, this classic sweet is especially popular during festivals, family celebrations, and festive meals. Despite its luxurious taste, Shrikhand is surprisingly easy to prepare with just a handful of ingredients.
Ingredients
- 500 g full-fat plain yogurt (curd)
- ½ cup powdered sugar (adjust to taste)
- ¼ teaspoon cardamom powder
- 2 tablespoons chopped pistachios or almonds, for garnish (optional)
Instructions
Step 1: Strain the Yogurt
Place the yogurt in a clean muslin cloth or cheesecloth and tie it securely. Hang it over a bowl or place it in a sieve set over a bowl in the refrigerator. Let it strain for 6–8 hours or overnight until most of the whey has drained away. You should be left with a thick, creamy yogurt known as chakka.
Step 2: Prepare the Shrikhand
Transfer the strained yogurt to a mixing bowl and whisk until smooth and creamy. Add the powdered sugar and cardamom powder. Continue whisking until the mixture is silky and well combined.
Step 3: Chill
Refrigerate the Shrikhand for at least one hour before serving. Chilling enhances both the flavour and texture.
Step 4: Garnish and Serve
Garnish with chopped pistachios or almonds. Serve chilled as a refreshing dessert or alongside hot puris for a traditional festive meal.
